Gently stir together two parts Prosecco and one part fresh peach puree, serve in a chilled flute, and you've got yourself this delicious pale yellow-and-bright fuchsia concoction! The first Bellini was poured in the summer of 1948 by Guiseppe Cipriani, founder and barman of the legendary Harry's Bar in Venice, Italy. Located just off the Grand Canal, the iconic establishment was frequented by the likes of Humphrey Bogart, Truman Capote, and Ernest Hemingway. Legend has it that the drink's characteristic gold-and-reddish pink sunset-like coloring reminded Cipriani of the striking chromatic paintings by 15th century Venetian artist Giovanni Bellini, hence the yummy drink's moniker!
